All poultry and poultry meat <br />products shall be clean, wholesome, free from spoilage and <br />adulteration, and shall be processed in a food establish- <br />ment meeting the requirements established by federal or <br />state regulations and shall be approved by the health <br />authority. <br /> <br />f. Source of Frozen Dairy Foods. All frozen dairy foods, <br />such as, but not limited to, ice cream, frozen custards, <br />ice l~ilk,milk sherbet, fruit or ice sherbet, and frozen <br />malted milk, shall meet applicable federal and state <br />regulations. <br /> <br />SECTION 10-12. Food protection <br /> <br />At all times, including while being stored, prepared, <br />displayed, served or transported, food shall be protected <br />from contamination by all agents, including dust, insects, <br />rodents, unclean equipment and utensils, unnecessary <br />handling, coughs and sneezes, flooding, draining, and <br />overhead leakage or condensation. The semperatgre of <br />potent~ally hazardous foods shall be 40 F (4.4 C) or below <br />or 150 F (66 C) or above at all times, except as otherwise <br />provided in this part. <br /> <br />SECTION 10-13. Food Storage <br /> <br />a. General. Stored food, whether raw or prepared, if removed <br />from the container or package in which it was obtained, <br />shall be enclosed in a clean covered container except <br />during necessary periods of preparation or service. Use <br />of cloth towel as a container cover is prohibited. <br /> <br />Food shall be stored at least 6 inches (15.2cm) above <br />the floor on clean surfaces in a way that permits <br />cleaning the storage area and that protects the food <br />from contamination by. splash and other means. <br /> <br />Food shall not be stored under exposed sewer or nonpotable <br />water lines. <br /> <br />Food not subject to further washing or cooking before <br />serving shall be stored in a way that protects it <br />against contamination from food requiring washing or <br />cooking. <br /> <br />Packaged food shall not be stored in contact with water <br />or undrained ice. <br /> <br />Unless its identity is unmistakable, bulk food not stored <br />in the container or package in which it was obtained shall <br />be stored in a container identifying the food by common <br /> <br />name. <br />
