<br />25 <br /> <br />The walls and ceilings of all rooms shall be kept clean <br />and in good repair. All walls of rooms or areas in which <br />food is prepared, or utensils, or hands washed, shall have <br />~asily cleanable, smooth, light-colored, washable, durable <br />surfaces up to the highest level reached by splash spray. <br /> <br />SECTION 10-29. Lighting <br /> <br />a. Lighting. All areas in which food is prepared or stored, <br />or utensils are washed, handwashing areas, locker rooms, <br />toilet rooms and garbage and refuse storage areas, <br />shall be well lighted. All working surfaces shall be <br />illuminated at not less than 20 foot candles of light. <br />In storage areas, a minimum of 10 foot candles of <br />light, thirty inches from the floor shall be provided. <br />Subdued lighting in dining and drinking areas and <br />adjacent access areas is acceptable, provided, that <br />lighting meeting the above requirements shall be avail- <br />able during all clean-up periods in such areas. <br /> <br />b. Protective Shielding. Shielding to protect against <br />broken glass falling into food shall be provided for all <br />artificial lighting fixtures located over, by or within <br />all food prepara~on areas, service station areas, <br />display areas, all refrigeration units, and utensil and <br />equipment washing areas and any other area wherein <br />utensils or exposed food are handled or stored. <br /> <br />SECTION 10-30. Ventilation. <br /> <br />All rooms in which food is prepared or served, or utensils <br />are washed, and toilet, dressing, and locker rooms, and <br />garbage and refuse storage areas shall be well ventilated <br />and shall be free of disagreeable or excessive odors, <br />condensation, vapors, smoke, and fumes. All cooking equip- <br />ment shall be provided with exhaust ventilating equipment. <br />Tempered make-up air systems shall be provided to permit the <br />entrance of an equal volume of displaced air and shall be <br />designed to prevent the entrance of insects, dust, or <br />other contaminating materials. Such make-up air systems <br />shall be maintained and kept in operable condition. All <br />gas or oil fired room heaters and water heaters shall be <br />vented to the outside air. <br /> <br />SECTION 10-31. Dressing Rooms and Lockers. <br /> <br />Facilities shall be provided for the storage of employees' <br />clothing and personal belongings. Where employees <br />routinely change clothes within the establishment, one or <br />more dressing rooms or designated areas shall be provided for <br /> <br />~ <br />
