<br />18 <br /> <br />SECTION 10-19. Sanitary Design, Construction and <br />Installation of Equipment and Utensils. <br /> <br />All new and replacement equi~ment and utensils shall be of <br />such material, workmanship, and design as to be smooth: easily <br />cleanable; resistant to wear, denting, buckling, pitting, <br />chipping, and razing; and capable of withstanding scrubbing, <br />scouring, repeated corrosive action of cleaning compounds, <br />and other normal conditions and operations. Food contact <br />surfaces shall be non-toxic.
