18 SECTION 10-19. Sanitary Design, Construction and Installation of Equipment and Utensils. All new and replacement equi~ment and utensils shall be of such material, workmanship, and design as to be smooth: easily cleanable; resistant to wear, denting, buckling, pitting, chipping, and razing; and capable of withstanding scrubbing, scouring, repeated corrosive action of cleaning compounds, and other normal conditions and operations. Food contact surfaces shall be non-toxic. Food contact surfaces and surfaces which come in contact with food debris shall be readily accessible forcleaning and inspection. All equipment shall be so installed and maintained as to facilitate the cleaning thereof, and of all adjacent areas, and shall be kept in good repair. All equipment installed on or after the passage of this ordinance shall comply with the following standards of the National Sanitation Foundation when applicable. Equipment not covered by such standards shall not be installed before it has been approved by the health authority. Single-service utensils shall be made from non-toxic materials. ~
