<br />~ ~ <br /> <br />4 <br /> <br />r. potentially Hazardous Feod shall mean any food <br />consisting in whole or in part of milk, milk products, <br />eggs, meat, fish, poultry, or any other food cap~ble <br />of supporting growth of infectious or toxigenic <br />micro-organisms. This term does not include clean, <br />whole, uncracked, odor-free shell eggs or foods which <br />have a pH level of 4.6 or below or a water activity <br />(~W) value of 0.85 or less. <br /> <br />s. Safe Water shall mean water which is not adulterated and <br />which is free from pathogens and coliform organisms. <br /> <br />t. Safe Water Sup~lr shall mean a source of safe water from <br />either the rnun~clpal water system or a source of water, <br />the operation, location, and construction of which have <br />been approved by the Minnesota Department of Health. <br /> <br />u. Sanitize shall mean the effective bactericidal treat- <br />ment of clean surfaces of equipment and utensils by a <br />process which has been approved by the health authority <br />as being effective in destroying micro-organisms, <br />including pathogens. <br /> <br />v. Single-Service utensils shall mean all which are meant <br />to be used only once and then discarded. <br /> <br />w. Soft Orinks shall mean all carbonated liquids, fruit <br />juices and fruit flavored drinks sold in packaged form <br />or by open container. <br /> <br />x. Smooth shall mean having an even surface free of <br />cracks, chips, open seams, rust, corrosion, breaks, <br />pits, checks, and ridges. <br /> <br />y. Utensils shall mean all kitchenware, tableware, dishes, <br />glassware, cutlery, pots, pans, containers, implements, <br />or other equipment with which food comes in contact <br />during storage, COOking, preparation, display or ser'lins. <br /> <br />z. Utensil Rental Service shall mean any establishment or <br />business which loans or rents utensils and food equipment <br />for the purpose of food storage, transportation, or any <br />other handling service, and further provided that in the <br />interpretation and enforcement of this ordinance the <br />terms utensil rental service and food establishment shall <br />be synonymous. <br /> <br />aa. Food Vending Machines shall me~n any self-service <br />device which upon insertion of a coin, coins or tokens, <br />or by other similar means dispenses unit servings of <br />food, either in bulk or in packages without the necessity <br />of replenishing the device between each vending operation. <br />
